Thanksgiving is America’s most celebrated “Feast Day”. What better way to merge this great, festive occasion than with a vegan lifestyle choice of a beautiful vegetable “turkey?”

Made with brown rice (vegetable pasta, non-wheat oats, grains and legumes) and black-eyed peas as the corpus or ‘body,’ the “wings and legs” are made from sliced, raw (organic) carrots. Hand-designed and shaped to look like a turkey, both “neck” and rear entry ‘holes’ are shaped by gentle depressions (and adorned with cherry tomatoes).
Celery leaves are used to enhance both appearance and culinary delight by sharing this Thanksgiving treat!

Eggplant makes a variety of familiar dishes. Eggplant “pancakes” are easily prepared by very low heat, slow sautéing, using small amounts of distilled water (‘water frying’). The batter can be made from blended nuts, seeds, sweet corn, broccoli or your favorite vegetable or fruit blend. Adorned with fresh parsley, the two vegetables are eaten together and may be supplemented with your favorite raw nuts and/or seeds. When used in a soup dish, the eggplant mixes well with fresh corn, slightly steamed carrots, broccoli, sweet peppers, cauliflower, and other vegetables of choice.

A rare treat is having eggplant soup—or any of its individual veggies—over a plate of organic, corn grits, a favorite ‘Southern’ delicacy worldwide! Any cooking of food should be at very low temperatures (under 130 degrees) and should avoid heating oils of every kind or description (heat turns oils into carcinogenic fare!). Of course, the very best foods for humans are raw, organically grown fruits, vegetables, nuts and seeds (FVNS), and their fresh-squeezed or blended juices.

Nurse Margie’s FOODS PREPARATIONS BOOK began some fourteen years ago, as a former carnivore designed new meals and experimented with various preparations that were very well received by family and friends who tried the dishes.
So attractive were the dishes that children and adults, alike, were drawn to them. Often, requests would come in for “this dish” or “that dish” (usually an attempt to describe the dish!).
When served with fresh, raw nuts and seeds, even the “skeptical, beef and potato” person fell ‘victim’ to the beautiful appearance, pleasing taste, and satisfying pleasure of “having dinned sufficiently.” One “meat eater” still “can’t believe that was chunk eggplant and not meat in that marinara sauce (over twelve years ago!).”
Mothers with children find their jobs made easier because of children’s
natural attraction to colorful fruits and vegetables. In the end, though,
children will eat what adults around them eat. A handy blender makes
fruits, nuts, seeds, and some vegetables viable options even for older
adults, including those unable to chew hard foods.
Inspirational Thought
End your day with a large glass of fresh-squeezed,
organic carrot juice! It is recommended that your juice
meals come from organic fruits and vegetables, fresh-
squeezed and consumed within minutes of preparation.
Storing fresh juices runs the risk of having nutrients escape.
This is especially true of orange juice (which suggests that
commercial orange juice is little more than “orange-
colored water!”).
In short, lean toward natural foods, uncooked and
organically grown. In the words of Dr. Bernard Jensen, by so doing, you will “Let your foods be your medicines”.
Dr. T. C. Fry assures us, “Man’s natural foods are fruits, nuts and succulent green leaves. Ideally his dietary admits of little else. As most disease evolves from dietary transgressions our sole objective with respect to food should be to eat those most suited for our optimal health” (Program for Dynamic Health, 1974, page 41).
